1 tbsp olive oil
150-200 grams sliced ham
1 small onion chopped
1/2 pepper chopped (any colour)
1 chopped carrot
sliced mushrooms would also be good to add
1/2 package frozen chopped spinach (way cheaper than fresh spinach), thawed and drained

250 grams spaghetti
3 small cans V8 juice
4 oz low fat cream cheese
grated parmesan

Heat oil in pot
Add onions, peppers, carrots and mushrooms (if using), fry for a few minutes

Once vegies are softish, add V8 and cream cheese to make a sauce
